Taco Seasoning Mix

1 teaspoon chili powder
½  teaspoon crushed dried red pepper
2  teaspoon dried minced onion
½  teaspoon dried minced garlic
¼  teaspoons oregano
½  teaspoon ground cumin
½  teaspoon cornstarch
1 teaspoon salt


Combine all ingredients in a small bowl and mix. Place the mix in a small glass jar or make a packet with a six-inch square of aluminum foil. The seasoning will keep for six months. This will make two tablespoons of taco seasoning and is enough to season one pound of ground beef or turkey for tacos.
To prepare the taco filling
1 pound ground beef or ground turkey
½ cup water
2 tablespoons taco seasoning mix

Brown the ground beef/turkey in a skillet and drain off the grease. Add water and taco seasoning mix and simmer for ten minutes stirring occasionally. Makes enough for 8 to ten tacos.

Chili Seasoning Mix

This Chili Seasoning Mix is excellent, but on the spicy side. If you like your chili hot, follow exactly. To tone it down, simply reduce the amount of crushed red pepper. The great thing is that this mix will also thicken your chili just a bit and make it very hearty.

1/4 cup all-purpose flour
4 teaspoons chili powder
1 tablespoon crushed red pepper
1 tablespoon dried minced onion
1 tablespoon dried minced garlic
2 teaspoons white sugar
2 teaspoons ground cumin
2 teaspoons dried parsley
2 teaspoons salt
1 teaspoon dried basil
1/4 teaspoon ground black pepper

In a bowl, whisk together flour, chili powder, red pepper, onion, garlic, sugar, cumin, parsley, salt, basil and pepper. Store in an airtight container. To use, add 2 tablespoons of mix for each 1 pound of meat, following your favorite chili recipe.
